So just what is buckwheat?
This hugely popular seed is an ancient grain with a long and storied history. Eaten by Asian, Eastern European (called kasha), and North African populations (Ethiopian Injera bread, for example) for centuries, this non-cereal pseudo-grain has amazing health benefits. It is gluten-free and filled with nutrients. And, it is high in fiber and rich in trace minerals. And, it contains manganese, magnesium, copper, and B vitamins. Technically, it is a fruit seed related to sorrel and rhubarb. So, even though it is not a true grain, it can be cooked like one and used as an alternative to couscous, rice, bulgur wheat, and pasta.
It can also be used to make pancakes and flatbreads.
